Dear Green Fork Farmers Market Customers,

It’s a great time for outdoor fun in the shade, enjoying your favorite local food grown naturally or handmade for you by our local farmers and artisans! Look and see what we have this week and place an order to reserve your products so you know you will have what you need when it’s time to fire up the grill.

NEW this week—Beyond Organics has fresh garlic, not cured, ready to add to all your summer dishes. Green Fork Farm has collard greens, as well as Thai Basil, which is the best basil for cooking Thai and Indian food because it is more stable under higher heat and longer cooking than sweet basil. And the flavor is amazing! Also available this week is a mixed herb bunch from Green Fork Farm. It has a little bit of a lot of different herbs, so you can custom mix them for each of your special dishes all week long. If you have any leftovers, you can use them to infuse water for a refreshing summer drink.

We have a great selection of pastured meats perfect for the grill, including whole chickens and chicken breasts, tenders, thighs, and drumsticks, premium ground beef and pork, pork sausages such as bratwurst, Italian sausage, chorizo, and breakfast sausage, delicious pork chops, roasts, and steaks, and lots of lamb choices—ground lamb, lamb chops, leg of lamb, roasts, shanks, kebabs, and ribs. In addition, we have nutritious organ meats and also soup bones and other items that make excellent stock for cooking.

Vegetables are also delicious on the grill! Try new Yukon Gold potatoes, red potatoes, Shiitake mushrooms, and onions. We also have green onions, kale, and collards available this week.

Fresh herbs make every dish more flavorful, and we have a large selection to choose from: basil, fennel leaf, mint, parsley, chives, sage, thyme, oregano, and lovage. Adams’ Acres on Clear Creek also has dried Shiitake mushrooms and mushroom powder to add a special touch to your meal.

Market News

The Market is back open this week and we have a couple of farmer’s taking a vacation this week. Cedar Thicket Farm will be gone for several weeks. Rocky Glade Farm will be gone but return next week in time for the Fourth of July holiday. Farmer Brown and Meadow Branch Beef are still gone and hopefully will return soon.

All the farmer’s markets in the region are now open. You can enjoy local grown and made products all week long. If you are tired of the heat and crowds, Stones River Market is here for you. You can order from the comfort of your house. Some of our products are very unique to the region. Then pick up on Wednesday only takes minutes in most cases. We are here for you.

White City Produce and Greenhouse brings back the Mountain Fresh tomatoes.

Wedge Oak Farm has introduced a ham slice from their pasture raised hogs this week.

Thank you for trying my Seeds of Success last week. I hope you enjoyed the wildly addictive snack mix. I am not only an inventive snack creator, but also a natural chef.

Our recipe this week comes from Mandy with Ridiculous Chocolate using the coconut flour that they have on the Market.

Coconut Flour Waffles

Ingredients

4 TBSP melted butter, ghee, or coconut oil
1/4 cup coconut flour
6 eggs Tag a Market Product
2-4 TBSP pureed apple, pumpkin, banana, pear, or other mix in (optional)
2 TBSP honey
1/4 tsp salt

Step by Step Instructions

Preheat waffle iron (I always use high), grease generously with coconut oil or ghee. Mix all ingredients until smooth. Pour batter onto waffle iron, and using a butter knife or the back of a spoon, spread the batter to evenly distribute over the iron. Cook 3-4 minutes, or until golden brown. Repeat with the remaining batter, keeping cooked waffles covered with foil in a 200 degree oven to keep warm if you wish.

Top with nutbutter, boiled fruit, or honey for a quick meal on the go.

And what a great morning it is! We had such an amazing time celebrating the release of the 2nd edition of our FRESH Local Foods Directory yesterday at The Green Corner Store & Soda Fountain. It’s official: The 2nd edition is fresh off the press and out in the streets! If you weren’t able to grab FRESH yesterday, you can snag copies at local food locales like our market, The Root Cafe, Hillcrest Artisan Meats, The Bernice Garden Farmer’s Market, The Green Corner Store & Soda Fountain, and so many others! For those of you too eager to wait for a print copy, you can find FRESH online right here. To those that made FRESH a reality: We can not thank you enough. Thank you so much to all of our wonderful sponsors, local businesses that purchased ads, volunteers that put in countless hours, our designer, and supervolunteer Marisa Nelson for making the release party such a success. Speaking of which, our growers sure are keeping the market interesting…

  • Fresh, shelled pinto beans from Hardin Farms. These beans are absolutely packed full of protein and fiber. I think I’ll eat mine with a side of cornbread.
  • Farm Girl provides another amazing deal with their pork grilling bundle, which comes with the perfect Summer mix of pork chops, andouille sausages, and baby back ribs from animal welfare approved, woodland-raised hogs. If you’re not already, I highly recommend following her blog. She provides amazing insights into the intersection of the food we eat and the land we live on; delving into the lives of hogs, the thing about trees, and plenty of pictures of newborn piglets.
  • Only the fastest-clicking customers get the limited offerings from Willow Springs Market Garden. It takes a quick click and check-out (or Sunday-morning visit to the Bernice Garden) to snag Robert’s churchill brussels sprouts, moringa leaves, defiant and sungold tomatoes, blueberries, and mulberries. I’m not telling merely to taunt you, but to highlight the amazing EPA-recognized farmer hero in our midst.
  • A huge congrats to Geek Eats on becoming a father this week! We’re so glad the Geek Family has grown and that your incredible hummuses, pesto, and granola are back on the market.

Next Saturday, June 28th, our friends at the Victory Garden Project are having a volunteer workday to help finish their hoophouse that’s been three years in the making. They recently received a $500 grant through ALFN’s Community Fund to receive the rest of the materials they needed to make this hoophouse happen. We’re so excited that this awesome community garden is growing and we hope that you’ll come out and join us.

FARM NEWS
June Farm Camp was a HUGE success! Campers milked the goats, washed the pony, fed the chickens, pulled weeds and planted seeds in the garden, and much, much more. Some of the older campers even learned cow herding when our cow decided to visit the neighbor one morning!!!

MARKET NEWS
We have two markets left before the Fourth of July…are you having a cook-out? This is one of my very favorite summer activities and we have a lot of great items on market to make a scrumptious locally grown meal! I buy hamburger every week to slowly add to my stockpile so when a holiday rolls around, I have an ample supply.

So here is my holiday challenge to you: how many items from our local farmers can you share with family and friends at your holiday cook-out? (Shameless Plug: please pick up market brochures to share with your friends and family, we would love to have them as customers too!)

Here are some helpful suggestions. I would enjoy hearing additional ideas that you will be using!!!

Wagon Wheel Ranch – Steaks and burgers for the grill: grass-fed, grass-finished
or try
Anderson Farms pork chops on the grill!
Smokin’ Hot Buns – Mandy makes some pretty awesome hamburger buns from scratch. These can be put in the freezer Tuesday night and thawed the morning of the Fourth for optimum freshness.
Johnston Family Farm – what better way to top off the burger than with hand-made Mozzarella cheese?
Rocky Acres – devil those eggs!!!! (Or make Egg Salad for your vegetarian friends.)
Leah Lakes & Bo & Lisa’s Lil Patch – Lettuce and onions, be watching for tomatoes to be listed for burger toppers. Watch for potatoes too, I love putting potatoes and onions in aluminum foil with some olive oil or Johnston Family Farm butter and tossing it on to the grill. Yum! And because Leah Lakes has about a bazillion kinds of lettuce, a large tossed salad will be a yummy addition.
Smokin’ Hot Buns, Bo & Lisa’s Lil Patch and Sylvan Falls Mill: an ample supply of ready-made desserts, or blueberries or blackberries from Lisa to make your own.
And don’t forget to top it all off with iced coffee from JavaGenisis (save some cream from your milk from Russell), make blueberry milkshakes or smoothies from Lisa and Johnston Family Farm or top it all off with kombucha from Rancho Alegre! Also refreshing herbal iced tea (herbs from Lisa – Rancho Alegre will also have mints and lemon balm listed next week) sweetened with honey.

Farmer Ricky Brown of Back River Farm, a Certified Naturally Grown Farm is back! This week Ricky is offering Kale, Scarlet Red Salad Turnips, Harkuei Turnips and Arugula and New Potatoes. Look for more offerings in the near future! Welcome Back, Farmer Brown!

Cedar Seeder has added Micro (Veggie) Wraps to their offerings! These handmade, fresh powerhouse goodies are full of 11 super Mircrogreens deliciously surrounded by either Rice Paper or Nori wraps! Lots of ‘scrumptiousness’ served with a delectable sauce! a definite “must try”! In addition to their Cedar, handmade planters, you can find their Microgreens for Pets combos for Cats and Dogs and for us humans: Arugula, Basil, Broccoli, Kale, Radish, Sunflower and Wheatgrass! The Veggie Patch is providing a good selection of wonderful fresh early Summer veggie offerings and have fresh Herbs listed as well! 3 types of Basil, Chives, Mint, Oregano,2 kinds of Parsley, Rosemary, Sage, Thyme and Medicinal Herbs Chamomile and Lavender. Check out their offerings from their Bulk Ground Buff to Steaks and Roasts! Delicious! Be sure and remove from grill or skillet at least one level from how you like your meat cooked! In other words, if you like it Medium, remove the meat when it reaching Medium Raw and let is sit covered for 10 minutes before serving! Turns out perfect every time!


Both Golden Farms and Rocky Acres offer fresh eggs from pastured chickens fed organic, soy and GMO free feed. Periodically Cara puts notes on the cartons to let you know what special treats her ‘girls’ have gotten in addition to their regular diet of bugs they find out in the pasture! Cute idea to let the children check out what the chickens who produce the eggs they have on their table are eating!

Marie of Bakery on Brooks has done it again! Hummingbird Bread! With some of the same ingredients as the famous Southern Hummingbird Cake, (pineapple, pecans, banana) this bread is a great Breakfast Bread or wonderful treat in the afternoon! Her Rolls, Paleo Bites and Cookies have all been a big hit on the Markets and all of us Gluten Free Folks appreciate her adventuresome spirit in creating wonderful treats that we can eat! I have to admit that her Chocolate Chip Cookies are truly my downfall! They are truly ‘made in heaven’!


In addition to Chicken Eggs, Cara of Golden Farms has Duck Eggs available! Get your order in early because there is a limited supply!


Jay and Patti of Dances With Bees have Honey offerings as well as some other great products! Use honey in your Lemonade for a great flavor! Great in Tea, also! I ordered a jar of Jay’s Golden Beeswax Food Grade Wood Finish this past week. My cutting boards and wooden utensils were in desperate need of conditioning! Check this product out and notice the picture that Jay posted! This stuff WORKS!

Patti makes some outstanding Natural Body Products from the honey and beeswax. Her Gardener’s Friend Soap works to get those ‘playin-in-the-dirt’ hands clean and keeps them soft. Fantastic product!


The Happy Cows belonging to Sam Jones of Cedar Rock Dairy continue to produce wonderful milk (for our pets)! The cream line on the jars these last couple of weeks has been impressive! Keep up the good work, ladies!


Rusty Repp of Little Tots Estate offers the sweetest goat milk I have had since I was a child, growing up in Ohio! The milk comes from Nigerian Dwarf Goats who are known to have the highest Butterfat of any milking goats! The Black Lab enjoys some everyday!

This is our 9th month with this service and our Drop is going strong! We have experienced some significant “growing pains” especially with driver punctuality! This was due to the time frame of the drivers trek through Atlanta at rush hour! I am happy to announce that the route has been adjusted and starting in JULY, our new drop off time will be 2:30pm!

For items that are not produced/grown locally we blessed to have a great resource! With over 9,000 Organic, “Clean” food products to choose from, Azure Standard can now be your “go to” place to get your Pantry Staples and other great items that are just not available from the local farmers and producers! After Church, the Black Lab and I will be working in the Garden this afternoon. In addition, I seem to have a nest of what looks like small Carpenter Bees that have nested underground under the ‘portico’ of the Garden Shed. They are not happy when I am in the vicinity and I am not happy that they are there! Any suggestions to get rid of them would be greatly appreciated. They are NOT Yellow Jackets or Hornets — they truly look like mini Carpenter Bees!


Last weekend, I was blessed to have the help of Sarah and Tyler Rockey and Austin Smith who came to get some things done that I am unable to do myself! I am most grateful for their help! Yesterday, Sarah and I ‘fenced off’ the area under the stairs and measured for the soon-to-be-built Chicken enclosure. It will be attached to one of the stalls of the barn and they should be happy little hens in their new home!

Volunteers Needed

My heart is warmed by the response to the request for volunteers and we are slowing getting to the point that folks can work just once a month! We still need a few more folks to make that a reality, so if you are interested, please contact Market Chance Claar-Pressley, who is coordinating the volunteers for me. Thank you Chance! You can email Chance at chancita@gmail.com . Chance tells me that we do need volunteers for July 3rd Market. I realize that the next day is a holiday, but if you could spare a couple of hours, it would be greatly appreciated!

Sarah Rockey is a STAR! She is the Volunteer for the Hamilton Mill Market and the one responsible for getting all of the coolers and orders in and out of the cars! She sets up the Market with me and gets folks checked out, answers questions and knows all about the products that are offered by the Farmers and Artisans! Although Sarah orders and picks up at the Crossfit O-Zone Lawrenceville Market, she takes the time to help out at Hamilton Mill. Thank you Sarah for your support and belief in the Markets and for your invaluable help!

We still need YOU! The goal is to get enough folks on board so that we can rotate volunteer duties. Can you spare a few hours once a month? Without you as Members, the Market would not exist and now the Market needs your help!

Farmer Ricky Brown of Back River Farm, a Certified Naturally Grown Farm is back! This week Ricky is offering Kale, Scarlet Red Salad Turnips, Harkuei Turnips and Arugula and New Potatoes. Look for more offerings in the near future! Welcome Back, Farmer Brown!

Cedar Seeder has added Micro (Veggie) Wraps to their offerings! These handmade, fresh powerhouse goodies are full of 11 super Mircrogreens deliciously surrounded by either Rice Paper or Nori wraps! Lots of ‘scrumptiousness’ served with a delectable sauce! a definite “must try”! In addition to their Cedar, handmade planters, you can find their Microgreens for Pets combos for Cats and Dogs and for us humans: Arugula, Basil, Broccoli, Kale, Radish, Sunflower and Wheatgrass! Ready to be snipped and added to smoothies, salads or your favorite juice!

Doug of Doug’s Garden is offering: Whole Garlic, Hakurei Turnips, ‘Kossack’ Kohlrabi (read “huge”) Leaf Lettuce Salad Mix and Carrots. In addition, he has 4 different Produce Boxes to choose from: Basic Seasonal Box, Early Summer Box, Herb Lovers Box and Root Lovers Box!


Miss Vicky of Fry Farm is offering: Dill, Rainbow Carrots, Green Onions, ‘Candy Onions’, ‘Cippolini’ Onions, ‘Red Candy Apple’ Onions’, ‘Superstar’ Onions, Shallots, Squash and Zucchini! Constantly adding new items as they come available, Vicky works hard to provide wonderful products!


The Veggie Patch is providing a good selection of wonderful fresh early Summer veggie offerings and have fresh Herbs listed as well! 3 types of Basil, Chives, Mint, Oregano,2 kinds of Parsley, Rosemary, Sage, Thyme and Medicinal Herbs Chamomile and Lavender. Veggies include: Arugula, French Green Beans, Bunching Onions, Collard Greens, Cucumbers, several types of Kale, Leeks, Lettuces, Mizuna, Spring Onions, 8 types of spicy peppers, Radishes, Spinach, 3 types of Squash, Swiss Chard, Tatsoi, Tomatoes and Zucchini and a Produce Box.


Be sure and check out the wonderful meat selections available from B&G Farms. From Pork Tenderloin, which is delicious, marinated and cook on the grill to the many varieties of Sausage, Pork Chops and Longaniza (hot dogs), any cut of Beef you want, Lynda has us covered! Try Chicken Wings on the grill!


David and Shalley Carrell of Carrell Farms are at our Markets as well as most of the popular Traditional Farmers’ Markets around the area! Check out their offerings from their Bulk Ground Buff to Steaks and Roasts! Delicious! Be sure and remove from grill or skillet at least one level from how you like your meat cooked! In other words, if you like it Medium, remove the meat when it reaching Medium Raw and let is sit covered for 10 minutes before serving! Turns out perfect every time!


Both Golden Farms and Rocky Acres offer fresh eggs from pastured chickens fed organic, soy and GMO free feed. Periodically Cara puts notes on the cartons to let you know what special treats her ‘girls’ have gotten in addition to their regular diet of bugs they find out in the pasture! Cute idea to let the children check out what the chickens who produce the eggs they have on their table are eating!

My Daily Bread Bruce and Dabrielle are heading to Wisconsin this week and their items will not be on the Market for 2 weeks while they are away!


Marie of Bakery on Brooks has done it again! Hummingbird Bread! With some of the same ingredients as the famous Southern Hummingbird Cake, (pineapple, pecans, banana) this bread is a great Breakfast Bread or wonderful treat in the afternoon! Her Rolls, Paleo Bites and Cookies have all been a big hit on the Markets and all of us Gluten Free Folks appreciate her adventuresome spirit in creating wonderful treats that we can eat! I have to admit that her Chocolate Chip Cookies are truly my downfall! They are truly ‘made in heaven’!


In addition to Chicken Eggs, Cara of Golden Farms has Duck Eggs available! Get your order in early because there is a limited supply!


Jay and Patti of Dances With Bees have Honey offerings as well as some other great products! Use honey in your Lemonade for a great flavor! Great in Tea, also! I ordered a jar of Jay’s Golden Beeswax Food Grade Wood Finish this past week. My cutting boards and wooden utensils were in desperate need of conditioning! Check this product out and notice the picture that Jay posted! This stuff WORKS!

Patti makes some outstanding Natural Body Products from the honey and beeswax. Her Gardener’s Friend Soap works to get those ‘playin-in-the-dirt’ hands clean and keeps them soft. Fantastic product!


The Happy Cows belonging to Sam Jones of Cedar Rock Dairy continue to produce wonderful milk (for our pets)! The cream line on the jars these last couple of weeks has been impressive! Keep up the good work, ladies!


Rusty Repp of Little Tots Estate offers the sweetest goat milk I have had since I was a child, growing up in Ohio! The milk comes from Nigerian Dwarf Goats who are known to have the highest Butterfat of any milking goats! The Black Lab enjoys some everyday!

Azure Standard

Order Pickup is June 24th, Tuesday at 6:15pm

This is our 9th month with this service and our Drop is going strong! We have experienced some significant “growing pains” especially with driver punctuality! This was due to the time frame of the drivers trek through Atlanta at rush hour! I am happy to announce that the route has been adjusted and starting in JULY, our new drop off time will be 2:30pm!

For items that are not produced/grown locally we blessed to have a great resource! With over 9,000 Organic, “Clean” food products to choose from, Azure Standard can now be your “go to” place to get your Pantry Staples and other great items that are just not available from the local farmers and producers! You can order items in bulk or individually and save on the premium prices charged at places like Trader Joe’s or Whole Foods! All items are shipped via semi-truck to our Drop Off location in Lawrenceville on a specified date. On pickup day, you come to the location, pickup your items and you are good to go! Simply log onto Azure Standard, create a free account and start shopping!

After Church, the Black Lab and I will be working in the Garden this afternoon. In addition, I seem to have a nest of what looks like small Carpenter Bees that have nested underground under the ‘portico’ of the Garden Shed. They are not happy when I am in the vicinity and I am not happy that they are there! Any suggestions to get rid of them would be greatly appreciated. They are NOT Yellow Jackets or Hornets — they truly look like mini Carpenter Bees!


Last weekend, I was blessed to have the help of Sarah and Tyler Rockey and Austin Smith who came to get some things done that I am unable to do myself! I am most grateful for their help! Yesterday, Sarah and I ‘fenced off’ the area under the stairs and measured for the soon-to-be-built Chicken enclosure. It will be attached to one of the stalls of the barn and they should be happy little hens in their new home!

Get away, today, on this beautiful and sunny day, to let your soul and spirit fly, as we head out to visit our latest farm tour for our market!

Here is another reminder of the Ruff’s invitation, the direction, and their phone number!

It should be a fun get out of town kind of day. I am looking forward to an afternoon of sun, seeing all of your faces, and a day away from baking!

Lee and Jennifer Ruff of End of the Road Farm would like to invite you on Sunday, June 22nd at 2 pm for a guided farm tour of their sustainable, draft-horse powered homestead. Samples of various goodies made from their sorghum, spelt flour, and pastured eggs will be provided.
Please wear comfortable walking shoes, as you’ll tour the crop fields, mobile chicken and pig pens, two market gardens, and horse paddock/pasture. We ask that children be well supervised, as this is a working farm as well as our home, and as such, buildings are off-limits. We look forward to sharing the afternoon with you, and hope you will join us with questions, enthusiasm, and an interest in seeing how and why we have chosen this wonderful farming life! Thank you!!

Take State Route 36 East into Fletcher (approximately 18 miles).

At the first stop light in Fletcher, turn left onto State Route 589.
