Cheese-fried zucchini sticks

Serves: 4 appetizer servings


Ingredients
1/4 cup dried bread crumbs
2 Tbs finely grated Parmesan cheese
2 tbs flour
1 tsp salt
2 medium zucchini-cut in 3/4in sticks
1 egg, beaten
2 Tbs olive oil

Step by Step Instructions
  1. Combine bread crumbs, cheese, flour, and salt in a large plastic bag; shake until well combined
  2. Dip zucchini sticks in egg, then toss in plastic bag to coat with bread crumb mixture
  3. In a large skillet, heat oil over medium high heat. Fry zucchini sticks, turning occasionally,until golden brown and crispy. Drain on paper towels. Serve immediately
