Beef Liver Creole

Ingredients
1 lb Beef liver (thinly sliced)
Flour for dusting and thickening
3 tablespoons Hot butter
1 1/4 cups Sliced onions
1 1/2 cup Canned tomatoes (homemade or store bought)
1/2 cup Diced celery
1 Thinly sliced green pepper
1/2 teaspoon Salt
A little Ground cayenne pepper to taste
Serve with rice
And/or collard greens
And/or green beans
And/or butter beans
Or noodles

Step by Step Instructions
  1. Cut the liver into thin slices if it has not been pre-sliced, and dust lightly with flour. Brown the liver in the butter and add the onions, tomatoes, celery, green pepper, salt, and cayenne.
  2. Cover the pan and simmer the ingredients for about 20 minutes. Drain the liquid from the pan and thicken it with flour. Add the liver and vegetables and simmer them for about two more minutes.
  3. Serve with Rice and vegetables or with noodles.
