Radish Greens Vegetable Soup

Vegan!

Ingredients
1 pound Radishes
1 pound Carrots
1 tablespoon Olive oil
1 medium sized Onion (diced)
4 stalks Celery (sliced, still with leaves)
3 cloves Garlic (minced)
2 Dried bay leaves
8 cups Vegetable broth
15 ounces White beans
Salt & pepper to taste
Red pepper flakes to taste

Step by Step Instructions
  1. Separate the radish bulbs and stems, rinse them in a colander and set them aside to dry for 20 minutes. Slice the bulbs and set them aside.
  2. Heat the oil in a pot over medium heat, then add the onion, radishes, celery, carrots and cook them to soften for 5 minutes. Add the garlic and cook for 2 more minutes.
  3. Add the bay leaves, broth, beans, salt, and pepper. Bring the pot to a boil, then reduce the heat to a simmer and let cook for 30 minutes.
  4. Remove the soup from the heat, stir in the radish greens and seasoning to taste, then serve.
