Rainbow Veggie Burgers

Serves: 9 burgers
Vegan!

Ingredients
2 cups Cooked brown rice
15 ounces Kidney beans (rinsed and drained)
1/2 cup Cornmeal
1/2 cup Barley flour
1 cup Onion (minced)
1 or 2 large cloves Garlic (minced)
1/2 teaspoon Cumin
1 teaspoon Hot sauce (optional)
3/4 teaspoon Salt
1/2 teaspoon Pepper
1/2 cup Corn kernels
1 cup Tomato (finely diced)
1 cup Chopped broccoli florets

Step by Step Instructions
  1. Preheat oven to 350 degrees and line 3 baking sheets with parchment paper or aluminum foil. Knead the rice, beans, cornmeal, barley flour, onion, garlic, cumin, hot sauce, salt, and pepper together a large bowl until well combined.
  2. Mix the corn, tomato and broccoli into the rice mixture by gently squishing it in. Scoop a cup of mixture into your hands and form the mixture into a ball. Repeat.
  3. Place the balls of mixture onto the prepared baking sheets and flatten them into 1/2 inch thick patties.
  4. Bake the patties for 15 to 20 minutes, flip the patties over, then bake for 20 more minutes.
  5. Serve topped as desired!
