Farm to Table Recipes

ONE POT KALE & QUINOA PILAF
2 cups salted water
1 cup quinoa
1 bunch lacinato kale, washed and chopped into 1" lengths
1 meyer lemon, zested and juiced
2 scallions, minced
1 tablespoon toasted walnut oil
3 tablespoons toasted pine nuts
1/4 cup crumbled goat cheese
salt and pepper
Bring the water to a boil in a covered pot. Add the quinoa, cover, and lower the heat until it is just enough to maintain a simmer. Let simmer for 10 minutes, then top with the kale and re-cover. Simmer another 5 minutes, then turn off the heat and allow to steam for 5 more minutes. While the quinoa is cooking, take a large serving bowl and combine half of the lemon juice (reserving the other half), all of the lemon zest, scallions, walnut oil (you can substitute olive oil if you desire), pine nuts, and goat cheese. Check the quinoa and kale when the cooking time has completed — the water should have absorbed, and the quinoa will be tender but firm, and the kale tender and bright green. If the quinoa still has a hard white center, you can steam a bit longer (adding more water if needed). When the quinoa and kale are done, fluff the pilaf, and tip it into the waiting bowl with the remaining ingredients. As the hot quinoa hits the scallions and lemon it should smell lovely. Toss to combine, seasoning with salt and pepper, and the remaining lemon juice if needed.

NEW DELIVERY DRIVER
As you all know, after 5 years, I am leaving my job as delivery driver for the CFM. Tuesday, Oct. 28, will be my last delivery. However, a new driver has come forward. Rachel Lynch has decided to take over deliveries, but two things will change.

First, customers will no longer see a delivery option on the CFM site. Instead, customers will notify Rachel directly and arrange for deliveries with her. Customers will also negotiate payment for delivery services with Rachel directly.

Second, since the driver cannot accept payments of any kind on behalf of the CFM, payment of all CFM orders MUST be made in advance of Tuesday’s delivery. Checks must be mailed in time to be posted to customer accounts before closing of market ordering on Monday. To ensure your account always has a positive balance, the CFM prefers payments in increments of at least $100.00. Mail checks made out to CFM to Kir Strobel, 744 Timberwood Trace, Monteagle, TN 37356.

Should at-home delivery not work for you, your second option is to leave your order at the Center to be picked up by you or a designée by 6 p.m. Wednesday. As with any left-behind order, there will be a $3.00 fee unless that order has been prepaid in full in advance. Don’t forget there is no freezer at the Center for the forseeable future, so it is imperative your items be picked up in a timely manner.

I have greatly enjoyed meeting and serving the CFM customers with at-home deliveries, and hope Rachel will, too.

Bring your kayak or small motor boat, pack up a cooler, find your work gloves and maybe a handsaw or clippers. We’ll make it a day on the water! Think tailgating, but better. Starts at 9am. Big love to Kristina of the BenderDinker and to Larry of Broadway Tackle for making it all happen. The BenderDinker helps support our educational programs at ALG year-round. SUN, NOV 2 – CROP MOB AT CLYDE’S FRESH PRODUCE FARM IN GROVETOWN. Bring your shovel and volunteer on this family farm where we’ll be planting dozens of fruit trees for an afternoon in Grovetown. SAT, NOV 8 – MEAD, CIDER AND CISER MAKING
Fermdamental’s Danielle Shelton will join us again, this time on a Saturday afternoon, November 8, to teach a mead, cider & ciser making workshop at the West End Market & Bakery in Augusta. The workshop will be demo style, given the multi-step nature of the processes. Participants will see many different stages of the mead, cider & ciser in its creation. Of course, sampling is all part of the fun. The educational & tasting component of the class costs $15. Start-up brewing equipment kits will also be available for an additional $50, upon request.
