Butterbeans with Rosemary and Garlic

<p>I wonder if many of us realize how fortunate we are that we are <span class="caps">STILL</span> able to get fresh butter beans at our Market? They are labor intensive and many farmers do not have the help to pick them so they no longer grow them. <span class="caps">BUT</span> we do have them at Market2Go and at the Mainstreet Farmers Market on Sat&#8230;for awhile! Please try some of this valuable bean. Here is a different recipe to tempt you! If you do not see them one week check back the next&#8230;.the season goes through mid to late July and sometimes there is another late planting for early fall beans. Thank goodness our farmers persevere for us!</p>

Ingredients
3 cups fresh butter beans
2 springs rosemary
2 strips salt pork or bacon
3 cloves garlic
1-2 tablsespoons olive oil
dash salt and pepper to taste

Step by Step Instructions
  1. Combine the first four ingredients in a large pot of salted water. Bring to a boil and reduce to a simmer. Cook until tender, about 30-40 minutes; drain and discard the rosemary, pork and garlic. Toss beans with oil and seasonings. Serve immediately or cool and refrigerate for a cold salad the next day.
