Beets - Hot or Cold, Minty Fresh

Serves: I'll leave that to you - it depends on how many beets you steam
Vegan!

Ingredients
at least one lb chopped beets
one handful fresh parsley
one small handful fresh mint - any variety
one tablespoon olive oil
one teaspoon white vinegar
dash salt and pepper

Step by Step Instructions
  1. place chopped beets in the steamer and steam until tender - do not over cook.
  2. toss steamed chopped beets with parsley, mint, olive oil, vinegar, salt and pepper
  3. let sit for flavors to set in, may be eaten fresh and warm or refrigerated and eaten as salad - also makes a nice addition to fresh green salad.
